Promoted by Mr.Carecci Salvatore, an entrepreneur and chef, this restaurant chain promises to provide tasty, wholesome Italian cuisine complete with a touch of Southern Italian hospitality.


In 1988, Mr.Carecci Salvatore started out his Italian restaurant with only three simple tables, producing fresh pastas, sauces in the small premises of Bukit Timah Road, in Singapore. Since then it has rapidly expanded base to China and India. Pasta Fresca has its own production equipment in all its outlets and all the ingredients are made fresh, daily. Besides producing for self it also caters to major F & B outlets and other related businesses. The proprietary products like wine, tomato puree, coffee beans, and olives are especially imported from Italy.

Chennai Operations Pasta Fresca opened its doors to Chennaites first, in the year 2006. They are slowly but surely gaining in popularity through the only reliable source of publicity- “word of mouth”. Advertisements appear in leading dailies, but repeat customers are those who are addicted to their food, once they have dined here.

Pasta Fresca has held Pizza Festivals, offering interesting and exotic Italian Pizzas, led by the Italian Chef Carlo Frusciante and his brigade recreating signature dishes! This cuisine offers over a hundred different combinations of pasta, sauces, pizza, and dessert.

Personal overview:

Everyday South Indian Meals were boring to my daughter especially since she’s been introduced to international cuisine from an early age. She’s aware that healthy options exist in all these cuisines in spite of our insistence that it exists only in our “Saapaadu”.

As a special treat I took my daughter to Pasta Fresca. The door was opened by one of the waiters doubling up as the door man. We opted for a table under the skylight .

I had a general idea about Italian cuisine but was flummoxed with all the unpronounceable names on the menu card. Of course some good soul had thoughtfully incorporated the description of each item in English. An additional four page menu card was attached since it was the Festival period and the options available had to be highlighted. My daughter immediately opted for the Pizza topped with sauted capsicum, onions and black olives. I enquired about soup and was told that one serving was adequate for two, but this was declined by my daughter of course!

I placed an order for Veg. Lasagne, oven baked vegetables and sauted mushrooms and cherry tomatoes with basil for starters. Of course we had to share one Tiramisu between us. I felt that the desserts were exorbitantly priced (of course this would help us to scale down our eating quantity and help us with our diet).

The service started with a bread basket which we tried to avoid till finally we gave in to our hunger pangs. Our food arrived quite in time and we had a good meal. We packed up our pizza to take home. The pizza here is not your normal pizza from the regular outlets, which are laden and stuffed with cheese, to the point of bursting!! The Italian Crust is any way also known as the Thin Crust which is just barely sprinkled with cheese.

The quality of service, food, ambience overall would vary from good to excellent. The waiters name badges amused me for a while. Neelakantan was called Giorgio, and similar Italian names for our home grown Southies! The Italian touch?

On the whole, a good dining experience. My only point of contention was when the oven baked vegetables were smothered with tomato puree. I would have preferred with only olive oil, salt and pepper, with may be a little cheese or mayonnaise.

The funny thing is, that we Chennaites are used to various sauces being kept on our table as seasoning what with Chinese food being a huge sellout. However, the waiters served two glass bottles, one extra virgin olive oil, and the other Balsamic vinegar. Almost all the kids assumed it to be soya sauce and I had a tough time keeping a straight face, seeing them wrinkle their nose in disgust. For the vinegar one needs mature taste buds!
